Scrambled eggs and leeks on toast

For 4 slices, you will need:

• 1 1 shallot
• 2 2 leeks
• 3 3 tablespoons olive oil
• 4 300 g Scrambled eggs (Oeufs brouillés)
• 5 100 g smoked cheese
• 6 4 slices thin toast
• 7 salt
• 8 pepper
• Total weight: 1,110 grams

Step by step recipe

• 1: Prepare and thinly slice 1 shallot.
  Prepare and thinly slice 2 leeks.
• 2: Heat 3 tablespoons olive oil in a frying pan on medium heat. When good and hot, add the sliced shallot, salt and pepper.
  Cook for 1 minute without colouring.
• 3: Add the leeks and cook uncovered, stirring gently, until they are just tender.
  Only add salt at the end of cooking.
  Set aside.
• 4: Prepare 300 g Scrambled eggs (Oeufs brouillés).
• 5: When just done, take off the heat and add 100 g smoked cheese...
• 6: ...and mix until fully incorporated.
• 7: Prepare 4 slices thin toast.
• 8: Spread a generous layer of cheesy scrambled eggs on each slice.
• 9: Top with the shredded leeks and serve immediately.

Remarks

For the bread, I recommend a rustic type, such as sourdough or seeded.
If you don't have smoked cheese, a normal cheese will do just fine (Comté, Cheddar...).
If you don't have time to make scrambled eggs, a small omelette will work instead.
