Toasting cashews greatly improves both their flavour and texture over the plain raw nuts. This is also the ideal opportunity to spice them up a little, like in this very simple recipe

Step by step recipe


Stage 1 - 1 min.
Spicy hot toasted cashew nuts
Preheat the oven to 320°F (160°C).

Put 13 egg white into a bowl and whisk for a few seconds. There is no need for it get frothy, this is just to liquefy it more.

Stage 2 - 3 min.
Spicy hot toasted cashew nuts
Zest 13 lime into the egg white and mix well.

Stage 3 - 2 min.
Spicy hot toasted cashew nuts
Add ½ cup cashew nuts and 1 tablespoon chilli spices.

Stage 4 - 1 min.
Spicy hot toasted cashew nuts
Mix well.

Stage 5 - 2 min.
Spicy hot toasted cashew nuts
Spread the nuts out on a sheet of cooking parchment laid on a baking sheet, then sprinkle with fine salt.

Stage 6 - 20 min.
Spicy hot toasted cashew nuts
Toast in the oven for 15 to 20 minutes.

Stage 7
Spicy hot toasted cashew nuts
Leave to cool before storing in an airtight jar.
Remarks
For even more flavour, try drizzling the nuts with a little lime juice as soon as they come out of the oven.
