Step by step recipe


Stage 1 - 3 min.
Spiced butternut gratin
Cut 100 g smoked cheese into small dice or slivers.

Stage 2 - 20 min.
Spiced butternut gratin
Prepare or reheat 400 g Bechamel sauce. Add the diced cheese and mix well then set aside.

Preheat the oven to 390°F (200°C).

Stage 3 - 10 min.
Spiced butternut gratin
Peel 2 butternuts squash using a vegetable peeler. Cut in half, scrape out and discard the seeds. Chop the flesh into small chunks.

Put the butternut chunks into a bowl.

Stage 4 - 2 min.
Spiced butternut gratin
Sprinkle 8 tablespoons olive oil and 60 g tandoori spices over and mix well.

Stage 5 - 2 min.
Spiced butternut gratin
Add 4 tablespoons French mustard and mix again.

Stage 6 - 20 min.
Spiced butternut gratin
Spread out over a sheet of cooking parchment laid on a baking sheet. Roast in the oven for 15-20 minutes. The butternut should be soft enough for a knife blade to go through it easily.

Stage 7 - 1 min.
Spiced butternut gratin
Put the butternut chunks into a buttered gratin dish.

Stage 8 - 1 min.
Spiced butternut gratin
Pour the cheese sauce over. Add any leftover cheese on top.

Stage 9 - 20 min.
Spiced butternut gratin
Bake for about 20 minutes until the top is nicely browned.
Remarks
If you don't have smoked cheese, opt instead for any other classic cheese.

You can use whatever spice mix you prefer: tandoori, chilli, Cajun...
Keeping
1 or 2 days in the fridge, covered with plastic film.
