Step by step recipe


Stage 1 - 12 min.
Warm white bean salad with smoked trout
The day before, soak 1 litre 200 ml white haricot beans in a bowl of cold water overnight.

The next day, drain.

Stage 2 - 1 hour
Warm white bean salad with smoked trout
Cook them in a large pot of boiling salted water, over a low heat, until tender.

Stage 3 - 5 min.
Warm white bean salad with smoked trout
Drain again.

Set aside.

Stage 4 - 3 min.
Warm white bean salad with smoked trout
Cut 600 mls smoked trout fillet into strips.

Set aside.

Stage 5 - 3 min.

Prepare 3 shallots and chop.

Stage 6 - 1 min.

Melt 3 knobs butter in a small frying pan over medium heat, then add the minced shallot.

Cook for 1 minute maximum, without browning.

Stage 7 - 1 min.
Warm white bean salad with smoked trout
Add the trout strips and barely cook, 1 minute or 2, they should just become opaque.

Remove from heat.

Stage 8 - 1 min.
Warm white bean salad with smoked trout
Pour the carefully drained beans into a bowl.

Stage 9 - 1 min.
Warm white bean salad with smoked trout
Add the trout, then the coarsely chopped herbs.

Stage 10 - 2 min.
Warm white bean salad with smoked trout
Pour in 15 tablespoons French dressing (vinaigrette), mix well and your salad is ready.
Remarks
Smoked trout can be replaced by other smoked fish, salmon of course, but also haddock.

The mini-cooking of the trout in step 7 is not absolutely essential if you prefer it just smoked.
