| 1 | Beat 2 eggs rapidly in a bowl, then salt and pepper. Cook with 1 tablespoon olive oil in a small frying pan on medium heat, rather like an omelette or scrambled egg. Don't overcook; the eggs should not dry out. Set aside. | ![]() |

| 3 | Put a large frying pan on medium heat and add the bread slices, butter side down. | ![]() |
