1 | Leave 2 sheets gelatin to soak in cold water until soft. | |
2 | Meanwhile, prepare 350 g Clementine confectioner's custard. When it is ready, add the thoroughly drained gelatin.
Mix well then cover with a lid or, better still, plastic film, and leave to cool in the fridge. | |
3 | Beat the cold confectioner's custard vigorously to loosen it. | |
4 | Add 200 g Clementine Chantilly and fold in gently with a soft spatula... | |
5 | ...until you have a smooth (and delicious!) clementine diplomat cream. | |
Remarks
If you don't have, or don't have time to make
clementine chantilly, use plain
chantilly cream, but the flavour will not be as pronounced.
