Step by step recipe

Leek and celery soup
Prepare 3 celeriacs, cut into small pieces.

Stage 2 - 10 min.

Prepare 9 leeks, chop.

Stage 3 - 3 min.

Prepare and chop 3 shallots.

Stage 4 - 1 min.

In a large saucepan over high heat, pour 12 tablespoons olive oil and when hot, add the chopped shallot.

Season with salt and pepper and cook for 1 minute without browning, stirring constantly.

Stage 5 - 1 min.
Leek and celery soup
Add the celery and leeks and stir well for 1 minute.

Stage 6 - 2 min.
Leek and celery soup
Cover with milk, lower the heat slightly and season with salt.

Stage 7 - 20 min.

Cook gently until celery is tender.

Blend to taste, then check the seasoning.
