1 | Cut 400 g filet mignon (pork loin) into small chunks. | |
2 | Put the pork chunks into a large bowl and sprinkle with the juice of 1 lime, salt and 2 tablespoons Cajun seasoning. Mix well, cover with plastic film and refrigerate for at least 2 hours (this can be prepared the day before). | |
3 | Pour 3 tablespoons olive oil into a large frying pan on high heat. When good and hot, add the chopped 1 onion and 1 tablespoon Cajun seasoning. Salt and cook for 3 or 4 minutes. It's fine if it colours slightly. | |
