Step by step recipe


Stage 1 - 5 min.
Cookies of the Camisards
In the bowl of a mixer, sift 100 g chestnut flour, 100 g oat flour, 50 g flour and 3 g baking powder (if using).

Stage 2 - 5 min.
Cookies of the Camisards
Add 100 g butter cut into small pieces, 100 g caster sugar and 2 eggs.

Stage 3 - 4 min.
Cookies of the Camisards
Knead on low speed until smooth.

Preheat your oven to 180°C (360°F).

Stage 4 - 10 min.
Cookies of the Camisards
Weigh small pieces of dough of about 30 gr. and roll them into a ball.

Stage 5 - 5 min.
Cookies of the Camisards
Place a sheet of baking paper on a baking sheet (or sheets), and place the balls of dough on top.

Press each one down to form a small patty.

Stage 6 - 3 min.
Cookies of the Camisards
Place a walnut kernel or an almond on each wafer.

Stage 7 - 20 min.
Cookies of the Camisards
Bake in the oven for 15-20 minutes.

Stage 8 - 30 min.
Cookies of the Camisards
Let cool, if possible on a wire rack, before serving.
Remarks
Baking powder is not absolutely necessary, but it allows to obtain cakes a little more airy.
