Stage 1/10 :

Prepare 500 g Jerusalem artichokes.

Prepare 500 g turnips, keeping the tops.

Cut turnips and Jerusalem artichokes into thin strips (a mandolin is ideal for this).

Prepare 1 shallot and chop.
