Creamed spinach with two cheeses (Slideshow version)

...and then arrange the spinach on the plates, place a few chopped hard-boiled eggs on top and drizzle with a little sauce.Serve immediately.
Remarks
You can also grate the feta cheese in step 1, but it's not easy to do so, so you cut it into small cubes.Don't leave the spinach too long in the sauce once it's been reheated, otherwise it will give off water and your sauce won't be as thick.
You can of course change the cheese to suit your taste, but don't hesitate to try a blue-veined cheese like Gorgonzola.
