Roasted Apricots with Verbena
Roasted apricots are simply apricots cut in half and then gently baked in the oven with a little butter and sugar, to caramelize them and intensify their flavor.
The result is a fruit that’s softer, more fragrant, and slightly candied—without turning into a full-fledged compote—which is often served with yogurt, ice cream, or cottage cheese, for example.
Here’s a version with verbena, an herb that pairs very well with apricots.
