The result is a fruit that’s softer, more fragrant, and slightly candied—without turning into a full-fledged compote—which is often served with yogurt, ice cream, or cottage cheese, for example.

Here’s a version with verbena, an herb that pairs very well with apricots.

Prepare the 500 g apricots, and place them on a sheet of parchment paper laid out on a baking sheet.

Preheat your oven to 160°C (320°F).

Brush each apricot with a little melted butter.

Place a verbena leaf inside each apricot.

Butter each apricot again.

Sprinkle the apricots with 2 tablespoons caster sugar.

Bake at 160°C (320°F) for 30 to 40 minutes.

Remove and discard the verbena leaves; your roasted apricots are ready.
Remarks
The cooking time is just a rough guide; start with at least 30 minutes, then adjust to your taste depending on whether you want the apricots to be very soft or less so.

You can adapt this recipe by using rosemary instead of verbena, or even leave it plain, without any herbs.

The sugar can be replaced with honey or maple syrup.
Keeping: It will keep in the fridge for several days; it's best to cover it with plastic wrap.
