Bay is a kind of laurel, grown as a shrub or small tree, of which the leaves are used, fresh or dry (other laurels are toxic).

Bayleaves are used frequently in mediterraneen cooking.

Use

Pick the leaves directly from the shrub.

Use rather whole, because unlike some herbs, bay leaves are not really edible: they are removed from the dish at the end of cooking.

Keeping

Bayleaves dry well. Keep the dried leaves in an airtight jar.
