Use

Use only thyme with fresh green leaves on nice bushy stems.

You can use thyme in two ways.

If you just want its flavour, add a whole sprig to the dish, and remove it after cooking.

Otherwise, if you want to eat it, you should pick off and use only the small green leaves.

Keeping

Thyme can be dried.
