Glossary (talk like a chef): "Deglaze"
Deglazing. Pouring a little liquid into a pan where cooking has left a deposit on the bottom, then scraping to free all the juices and mix them with the liquid. Example:
"Deglaze frying pan, where fruits are caramelized, with a little rum."
Remove contents of frying pan , put back on heat, add rum. Scrape bottom of pan with a wooden spatula
to dissolve juices in rum.
