Dorer

It's to gild or coat a pastry with gilding (or beaten egg), with a brush, before baking, so that during baking the pastry takes on a beautiful golden blond color.

Example: "Roll out the brioche dough into a galette, then dorer the top."

Meaning: Roll out the brioche dough into a galette, then brush the top with dorure.
