Two-colour cauliflower salad
Towards the end of winter you can sometimes find purple cauliflower, as well as the usual white sort, or purple-headed broccoli (calabrese). Mix the varieties for a delicious, crunchy two-tone salad.

Step by step recipe


Stage 1 - 4 min.
Two-colour cauliflower salad
Trim the leaves of both cauliflowers (here I'm using a cauliflower and purple-headed broccoli).

Rinse briefly.

Stage 2 - 5 min.
Two-colour cauliflower salad
Cut the broccoli into small florets.

Stage 3 - 1 min.
Two-colour cauliflower salad
Put into a salad bowl.

Stage 4 - 5 min.
Two-colour cauliflower salad
Do the same with the cauliflower.

Stage 5 - 3 min.
Two-colour cauliflower salad
Add 150 g rémoulette dressing and mix well.

Your salad is ready.
Remarks
If you don't have rémoulette dressing, a simple mayonnaise or, better still, lemon mayonnaise will do the trick.

You can prepare the cauliflower more quickly with a mandolin, but the result will be less attractive.
Keeping: 1 or 2 days at most in the fridge, in a sealed jar.
