Two-colour cauliflower salad
Towards the end of winter you can sometimes find purple cauliflower, as well as the usual white sort, or purple-headed broccoli (calabrese). Mix the varieties for a delicious, crunchy two-tone salad.

Stage 4 - 5 min.
Two-colour cauliflower salad : Stage 4
Do the same with the cauliflower.

Stage 5 - 3 min.
Two-colour cauliflower salad : Stage 5
Add 150 g rémoulette dressing and mix well.

Your salad is ready.
Remarks
If you don't have rémoulette dressing, a simple mayonnaise or, better still, lemon mayonnaise will do the trick.

You can prepare the cauliflower more quickly with a mandolin, but the result will be less attractive.
Keeping: 1 or 2 days at most in the fridge, in a sealed jar.
Source: Home made.

How to glaze a tart
How to glaze a tart
Professional pastrycooks usually say that "a beautiful cake is already half sold", it is one of the reasons why they do not put a tart on sale without glazing it ("abricoter" in Fench), i.e. coating it with a thick apricot syrup. This glaze gives a glossy finish to the tart (see the photographs below) and also protects it from the air and thus from oxidation and browning. It's a quite simple technique that you can easily apply to give to your desserts a professional look. This is how you do it.
