Step by step recipe


Stage 1 - ⌛ 3 min.
Cajun-style lentil salad : Stage 1
Heat 2 tablespoons olive oil in a small frying pan over high heat. When really hot, add 200 g cajun pulled pork.

Stage 2 - ⌛ 8 min.
Cajun-style lentil salad : Stage 2
Fry until as done as you like, stirring frequently.

Set aside.

Stage 3 - ⌛ 15 min.

Cook 300 g green lentils in boiling salted water.

Drain as soon as they are tender.

Stage 4 - ⌛ 5 min.

Prepare 1 shallot and chop finely.

Stage 5 - ⌛ 2 min.

Put the thoroughly drained lentils into a salad bowl and add the chopped shallot.

Stage 6 - ⌛ 2 min.

Then add the refried pulled pork and 5 tablespoons french dressing (vinaigrette).

Stage 7 - ⌛ 1 min.
Cajun-style lentil salad : Stage 7
Mix well and serve right away while the salad is still warm.
Remarks
If you don't have the small green "Puy" lentils, normal lentils will do just fine.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
