Sometimes also called "Salade à Bonnot", this is a salad made with a chiffonade of green salad, diced Comté and Montbéliard sausages, grilled croutons and a good vinaigrette.

Step by step recipe


Stage 1 - ⌛ 10 min.
"Jules Bonnot" salad : Stage 1
Cook 1 Montbéliard sausage, to taste, in a small frying pan.

Set aside.

Stage 2 - ⌛ 5 min.
"Jules Bonnot" salad : Stage 2
Cut 2 slices bread into small pieces, then grill them with 3 tablespoons olive oil in the same pan as the sausage.

Set aside.

Stage 3 - ⌛ 10 min.

Prepare 1 lettuce, cut into chiffonade and pour into a salad bowl.

Stage 4 - ⌛ 3 min.

Cut 100 g Comté cheese into small, even pieces and pour into the bowl.

Stage 5 - ⌛ 3 min.

Cut the sausage into small pieces and pour into the bowl.

Stage 6 - ⌛ 2 min.

Add the croutons and chopped parsley.

Stage 7 - ⌛ 2 min.

Then, just before serving, add the vinaigrette to taste and mix well.

If possible, enjoy with the croutons and sausage still warm or lukewarm, for a delicious contrast.
Remarks
This salad is called "Jules Bonnot", after the famous leader of the Bonnot gang, because it contains Montbéliard sausage and Comté cheese, and because Bonnot was a local boy? A mystery...

Montbéliard sausage can be replaced by another sausage, smoked if possible.
Keeping: Enjoy without tader, once the vinaigrette has been added.
