You may already be familiar with pasta with cherry tomatoes, olives and feta, but here's a slightly more sophisticated variation without olives, but with salmon and fresh spinach.

The feta and cherry tomatoes add a delicious creaminess.

  • 1 cherry tomatoes 300 g cherry tomatoes
  • 2 fresh salmon 100 g fresh salmon
  • 3 fresh spinach 400 g fresh spinach
  • 4 olive oil 3 tablespoons olive oil
  • 5 feta 250 g feta
  • 6 dry oregano 2 tablespoons dry oregano
  • 7 olive oil olive oil
  • 8 Pasta 300 g Pasta
  • 9 salt salt
  • 10 pepper pepper

Step by step recipe

Wash and halve 300 g cherry tomatoes, sprinkle with fine salt and leave to stand.

Prepare 100 g fresh salmon, carefully remove all bones and skin, salt on both sides, then set aside.

Prepare 400 g fresh spinach but do not cook, cut into chiffonade if possible, then set aside.

Preheat oven to 200°C (390°F).

Take a gratin dish and pour 3 tablespoons olive oil into the bottom, then place 250 g feta, cut into 2 pieces, inside.

Place the salmon steak in the middle.

Surround with spinach.

Then tomatoes, sprinkle with oregano and drizzle with olive oil.

Bake at 200°C (390°F) for 20 minutes.

Just before the end of the cooking time, cook 300 g Pasta, then drain.

Pour them into the dish, straight from the oven...

...and mix it all together, the feta will combine with the tomatoes to form a delicious, creamy liaison for the pasta, salmon and spinach.

Remarks
This is a very approximate recipe, so feel free to adapt the proportions to your taste, or what you have on hand.

If you find the dish a little too thick, you can thin it out with a little pasta cooking water.
