For this recipe, we use cherry tomatoes cooked with herbs, into which we add the pasta and cheese before binding everything with a little cooking water.

Step by step recipe


Stage 1 - ⌛ 10 min.
Pasta with cherry tomatoes and herbs : Stage 1
Wash, then cut into 2, 500 g cherry tomatoes.

Sprinkle with fine salt and set aside.

Stage 2 - ⌛ 1 min.

In a frying pan over medium heat, pour in 4 tablespoons olive oil and when hot add 1 sprig sage, 1 sprig thyme and 1 garlic clove crushed with the blade of a knife.

Cook for 1 minute, stirring to flavour the oil.

Add the tomatoes, season with pepper, stir a little and cover to cook for 5 to 10 minutes.

Meanwhile, start cooking the pasta.

When the tomatoes start to stew a little, uncover them and stir a little.

Take the pasta from the pot with a skimmer and put it directly into the pan.

Stage 7 - ⌛ 3 min.

Mix well, add grated 50 g Parmesan (Parmigiano Reggiano), a little pasta cooking water, and stir gently to form the cooking sauce.

Check seasoning.

Stage 8
Pasta with cherry tomatoes and herbs : Stage 8
Serve immediately, with a little grated Parmesan cheese on top, and a drizzle of olive oil.
Remarks
If you make this recipe in summer or autumn, you can replace the cherry tomatoes with diced tomatoes.

Instead of parmesan, you can try pecorino, or a mixture of the two.
Keeping: Enjoy immediately, but can be stored in the fridge for 1 or 2 days, protected by cling film.
