You are no doubt familiar with classic rice pudding, so simple and delicious. Well, here's a version with a Canadian twist: sweetened with maple syrup instead of sugar, added in two stages.

For 3 people, you will need:
  • 1 rice 108 ml rice
  • 2 whole milk 500 ml whole milk
  • 3 maple syrup 66 ml maple syrup
  • 4 maple syrup 66 ml maple syrup

Step by step recipe


Stage 1 - 10 min.
Canadian rice pudding
Put a saucepan of water on high heat. When it boils, tip in 108 ml rice.

Stage 2 - 5 min.
Canadian rice pudding
Leave to cook for about 5 minutes, then drain.

Stage 3 - 10 min.
Canadian rice pudding
Pour 500 ml whole milk and 66 ml maple syrup into a large non-stick pan and bring up to a simmer.

Stage 4 - 40 min.
Canadian rice pudding
Add the pre-cooked rice and mix well (with a soft spatula, for instance).

Turn the heat down to minimum and leave to cook gently and thicken.

Stage 5
Canadian rice pudding
Every time a skin forms on the surface (which is quite normal), simply mix this in.

Stage 6
Canadian rice pudding
Continue cooking until the rice pudding is smooth and fairly thick.

Stage 7 - 1 min.
Canadian rice pudding
Take off the heat and add 66 ml maple syrup.

Stage 8 - 1 min.
Canadian rice pudding
Mix one last time and your Canadian-style rice pudding is ready.

Stage 9
Canadian rice pudding
Put into ramekins for individual servings.
Remarks
It is important to add the maple syrup in two stages to give the rice pudding the full benefit of its flavour.

If you'd like even more flavour, you can increase the quantity of maple syrup added the second time.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
