For 50 pieces, you will need:
  • 1 maple syrup 250 g maple syrup
  • 2 butter 25 g butter
  • 3 cream 125 g cream
  • 4 walnut kernels 50 g walnut kernels
  • Total weight: 450 grams

Step by step recipe


Stage 1 - ⌛ 3 min.
Maple syrup cream sugar : Stage 1
Pour 250 g maple syrup and 25 g butter into a saucepan.

Stage 2 - ⌛ 5 min.

Place over medium heat and bring to the boil.

Add 125 g cream and bring back to the boil.

Stage 4 - ⌛ 30 min.

Cook gently over medium heat until it reaches 118°C (244°F) (use a thermometer).

Meanwhile, pour 50 g walnut kernels into a small frying pan over medium heat, and roast for a few minutes (you can also roast in the oven).

Stage 6 - ⌛ 1 min.

Leave to cool a little, then chop coarsely.

Set aside.

Place a 20x20 cm (8x8 inch) baking tin on a baking sheet, and line the bottom with a piece of baking paper.

When the mixture has reached 118°C (244°F), turn off the heat.

Pour into a small bowl.

Whip for 1 or 2 minutes...

...until the mixture changes color and becomes lighter.

Stage 12 - ⌛ 2 min.

Add the walnuts and mix well.

Stage 13 - ⌛ 2 hours

Pour into the mold, and spread in an even layer, pressing down if necessary.

Place in the fridge for 2 hours.

After this time, remove from the mould and cut into small pieces.

Pour into a jar and store in the fridge.
Remarks
Be careful when cooking, as the mixture tends to overflow easily, so don't heat too much and keep a close eye on it.

For an even more Canadian touch, use pecans instead.
Keeping: Several weeks in the fridge in a closed jar.
