Step by step recipe


Stage 1
Apple-almond shortbread tart
Spread 1 lb + 5.1 oz Sweetcrust pastry (pâte sablée) and line a tart tin or circle, here 24 cm (9.5 inches) in diameter.

Preheat your oven to 200°C (390°F).

Stage 2
Apple-almond shortbread tart
Spread an even layer of almond cream over the tart base.

Place in the fridge.

Stage 3
Apple-almond shortbread tart
Peel 10 apples, cut in 2 lengthways and remove the hearts.

Stage 4
Apple-almond shortbread tart
Cut each apple half into strips.

Stage 5
Apple-almond shortbread tart
Garnish the tart base with apple slices...

Stage 6
Apple-almond shortbread tart
...all over the almond cream.

Stage 7
Apple-almond shortbread tart
Place in the oven, with the bottom down, for approximately 30 minutes.

If your apples turn too much color at the end of cooking, protect them with a sheet of aluminum foil.

Stage 8
Apple-almond shortbread tart
Let cool before, if possible, glazing the top of the tart with a brush.

Stage 9
Apple-almond shortbread tart
Enjoy warm or cold.
Remarks
As the combination of shortcrust pastry and almond cream is quite sweet, I recommend you choose more tart apples (reinette, granny-smith...) for a delicious contrast.

Glazing in step 8 is not absolutely essential, but it quickly turns your tart into a little masterpiece...
