  • 2 Pasta 500 g Pasta
  • 3 pesto 300 g pesto
  • 4 Parmesan (Parmigiano Reggiano) Parmesan (Parmigiano Reggiano) (optional)

Step by step recipe


Stage 1 - 10 min.
Farfalle with green asparagus : Stage 1
Prepare 500 g green asparagus spears, cut into small pieces.

Stage 2 - 1 min.
Farfalle with green asparagus : Stage 2
Plunge them into a pan of boiling salted water...

Stage 3 - 5 min.
Farfalle with green asparagus : Stage 3
...then immediately add the pasta.

Cook for the time specified for the pasta (see packet).

Stage 4 - 3 min.
Farfalle with green asparagus : Stage 4
Drain.

Stage 5 - 2 min.
Farfalle with green asparagus : Stage 5
Return to the pan over low heat, add 300 g pesto, and stir for 1 or 2 minutes.

Serve with a sprinkling of grated Parmesan, if possible.
Remarks
The trick in this recipe is to cook the asparagus and farfalle together. That's why we use farfalle, as it cooks quite quickly (about 5 minutes), which is about the same time as the asparagus.

If you want to use other types of pasta that take longer to cook, start with them and then add the asparagus, 4 minutes before the end.
Keeping: 1 or 2 days in the fridge, protected by cling film.
