Step by step recipe


Stage 1 - ⌛ 10 min.
Sorrel mayonnaise : Stage 1

Stage 2 - ⌛ 3 min.
Sorrel mayonnaise : Stage 2
Pour 1 egg, 150 g oil, 1 tablespoon mustard, salt and pepper into a high-sided container.

Stage 3 - ⌛ 1 min.
Sorrel mayonnaise : Stage 3
Blend for a few seconds to start forming the mayonnaise.

Stage 4 - ⌛ 2 min.
Sorrel mayonnaise : Stage 4
Remove the mixer and add some of the sorrel leaves.

Stage 5 - ⌛ 1 min.
Sorrel mayonnaise : Stage 5
Blend again.

Repeat until all the sorrel leaves have been incorporated.

Stage 6
Sorrel mayonnaise : Stage 6
Check the seasoning, and your sorrel mayonnaise is ready.
Remarks
The amount of sorrel is fairly indicative, but there still needs to be a lot of it for the flavor to stand out.
Keeping: 2 or 3 days in the fridge, in a closed jar.
