Gribiche sauce is similar to mayonnaise, but is made with hard-boiled eggs, capers, gherkins, and herbs.
It pairs very well with cold meats and fish, as well as certain vegetables.

Here is a simplified version, made with mayonnaise.

Step by step recipe


Stage 1 - ⌛ 5 min.
Gribiche Sauce : Stage 1
Prepare 250 g mayonnaise and mix in 2 tablespoons vinegar.

Set aside.

Stage 2 - ⌛ 5 min.
Gribiche Sauce : Stage 2
Wash and dry Parsley, Tarragon, Chervil, and Chives.

Stage 3 - ⌛ 1 min.

Chop them together, then set aside.

Stage 4 - ⌛ 1 min.

Coarsely chop 4 gherkins in vinegar and 2 tablespoons capers.

Set aside.

Stage 5 - ⌛ 2 min.

Chop 1 hard-boiled egg fairly finely.

Stage 6 - ⌛ 2 min.
Gribiche Sauce : Stage 6
Add the herbs, pickles, capers, and chopped hard-boiled egg to the mayonnaise, mix well, and check the seasoning, especially to make sure there’s enough vinegar.

Your gribiche sauce is ready.
Remarks
If you don't have all the herbs, that's okay—just try to have at least tarragon and chives.

The proportions of hard-boiled eggs, capers, and gherkins are just a guideline—adjust them to your taste.
Keeping: 1 or 2 days in the refrigerator, in a sealed container.
