Step by step recipe


Stage 1 - ⌛ 10 min.
Green Piedmont Salad : Stage 1
Prepare 200 g courgette and dice, or slice into rounds if small.

Stage 2 - ⌛ 5 min.

Dice 150 g cervelas fairly small.

Stage 3 - ⌛ 5 min.

Chop 400 g cooked potatoes into small pieces.

Stage 4 - ⌛ 5 min.
Green Piedmont Salad : Stage 4
Put into a salad bowl the courgettes, cervelas, potatoes and finely chopped 50 g red onion.

Stage 5 - ⌛ 5 min.
Green Piedmont Salad : Stage 5
Add 4 hard-boiled eggs cut into quarters or sliced and the chopped parsley.

Stage 6 - ⌛ 3 min.
Green Piedmont Salad : Stage 6
Finish by adding 200 g mayonnaise and mix well.

Your Piedmont salad is ready.
Remarks
It is best to use the smallest courgettes you can find as these are crunchier and can simply be sliced.
Keeping: A few hours in the fridge, covered with plastic film.
