Making Béarnaise sauce to serve with meat or fish isn't very easy, so here's a quick way to make mayonnaise with all the delicious flavors of Béarnaise sauce.

Step by step recipe


Stage 1 - ⌛ 5 min.
Mayonnaise-Béarnaise : Stage 1
Prepare 250 g mayonnaise and add 2 tablespoons vinegar to it, stirring with a spoon.

Stage 2 - ⌛ 5 min.
Mayonnaise-Béarnaise : Stage 2
Remove the leaves from the tarragon and chervil, then prepare 1 shallot.

Stage 3 - ⌛ 2 min.
Mayonnaise-Béarnaise : Stage 3
Chop the chervil, tarragon, and shallot.

Stage 4 - ⌛ 1 min.
Mayonnaise-Béarnaise : Stage 4
Add them to the vinegar-based mayonnaise (which is actually a rémoulade sauce ), mix well, and then check the seasoning.

If possible, let it rest in the fridge for 1 hour or more so that the flavors of the herbs infuse the mayonnaise.

Your mayonnaise-Béarnaise sauce is ready; it goes very well with meat, fish, or cooked or raw vegetables.
Remarks
You can easily adjust the amounts of herbs, shallots, and vinegar to suit your taste.

You can replace half of the vinegar with dry white wine.
Keeping: 1 or 2 days in the refrigerator, in a sealed container.
