This delicious soup is a flavoursome mix of herbs, mushrooms, soya noodles and small diced vegetables briefly cooked in vegetable stock.

It takes a while to make and there are lots of ingredients, but the result is worth it.

For 4 people, you will need:
  • 0 dried chinese black mushrooms (shiitake) 50 g dried chinese black mushrooms (shiitake)
  • 1 carrot 1 carrot
  • 2 leek 1 leek
  • 3 shallot 1 shallot
  • 4 chicken breast 50 g chicken breast
  • 5 herbs of your choice herbs of your choice
  • 6 Vegetable stock 1 litre Vegetable stock
  • 7 sesame oil 3 tablespoons sesame oil
  • 8 fine soya noodles 50 g fine soya noodles (optional)
  • 9 peanuts 50 g peanuts
  • 10 peas 50 g peas

Step by step recipe


Stage 1 - 30 min.

Rehydrate 50 g dried chinese black mushrooms (shiitake).

Prepare1 carrot and dice small, prepare 1 leek and 1 shallot and chop finely.

Stage 2 - 30 min.

Poach 50 g chicken breast for 5 minutes in 1 litre Vegetable stock, then remove and cut into small pieces.

Drain and chop the mushrooms.

Rinse the herbs, dry them and pick off just the leaves for use.

Dry roast the peanuts briefly in a frying pan.

Stage 3 - 2 min.

Pour 3 tablespoons sesame oil into a large saucepan on medium heat.

When hot, add the chopped shallot, salt and pepper, stir well and leave to cook for 1 minute without colouring.

Add the carrots and leeks, mix well and cook for 3 minutes.

Next add the peas...

Stage 5 - 1 min.

...then the mushrooms and chicken.

Pour in the vegetable stock and bring to the boil.

Cook for a further minute or two, then test the carrots to check if everything is cooked.

Add 50 g fine soya noodles if you like and mix well.

At the last minute, add the roughly chopped herbs and dry-roasted peanuts.

Serve without delay...
Remarks
I encourage you to add include some lemon balm with the herbs. This gives the soup a characteristic delicate flavour.

  • Instead of hating, and waste time to write that, you should take a look to what the website offer, especially the printing format of each recipe by the button "Printable format"...

  • I would surely like to copy this recipe but because the author has put so much work into presenting it in the way that she did, it's impossible to do so. I absolutely HATE this website and this type of format. Make available the choice of just copying the recipe and instructions without all that visual crap.
