African style chicken
This is a sort of smoked chicken, cooked in a tomato-coconut sauce, and served with kidney beans and plain rice. It's quite a simple recipe, with ready-made ingredients, but which needs a long cooking time on low heat (one hour).

For 2 people, you will need:

  • 4 unsweetened coconut milk 50 ml unsweetened coconut milk
  • 5 tinned red kidney beans 170 g tinned red kidney beans
  • 6 button or field mushrooms 45 g button or field mushrooms (optional)
  • 7 small pieces of bacon 45 g small pieces of bacon
  • 8 tomato coulis 85 ml tomato coulis
  • 9 fine (or table) salt fine (or table) salt
  • 10 pepper pepper
  • 11 palm oil 13 tablespoon palm oil
  • 12 palm oil 1 tablespoon palm oil
  • Total weight: 1,030 grams

Step by step recipe


Stage 1 - 20 min.
African style chicken
Skin 13 smoked chicken, keeping only flesh (discard skin and bones), then cut out into small pieces.

Stage 2 - 3 min.

In large pan, heat 1 tablespoon palm oil (or olive oil), then add chopped 13 onion, salt and pepper.

Cook for a few minutes without browning too much.

Stage 3 - 1 min.

Add chicken pieces.

Stage 4 - 3 min.

Stir well, and cook a few minutes while stirring so it doesn't catch on the bottom.

Stage 5 - 1 min.

Pour in half of 85 ml tomato coulis.

Stage 6 - 1 min.

Stir well.

Stage 7 - 1 min.

Pour in 50 ml unsweetened coconut milk, stir well.

Stage 8 - 1 hour

Cover and leave to cook on low heat for at least an hour.

Stage 9 - 10 min.

Meanwhile heat 13 tablespoon palm oil in a frying pan, then add 45 g small pieces of bacon and cook for a few minutes until they are lightly fried.

Set aside.

Stage 10 - 2 min.

In another pan, heat 1 tablespoon palm oil, then add drained and rinsed 170 g tinned red kidney beans.

Cook one or two minutes while stirring so that that they do not burn on bottom.

Stage 11 - 2 min.

Add remaining tomato coulis, then fried bacon, and 45 g button or field mushrooms if desired.

Stage 12 - 20 min.
African style chicken
Stir well and leave to cook covered on low heat until chicken has its full cooking time.

Meanwhile cook rice.

Stage 13

To serve, put rice onto a plate, add beans on top, then chicken.
Remarks
You can easily replace palm oil with olive oil, for a tastier dish tomato coulis by tomato sauce for pizzas.

It's a meal which can easily be re-heated or frozen. So do not hesitate to make a good deal of it, even if it's for the first time.
Keeping: Several days in the fridge, in a closed jar.
