Step by step recipe


Stage 1 - 3 min.
Cajun-style lentil salad
Heat 2 tablespoons olive oil in a small frying pan over high heat. When really hot, add 200 g Cajun pulled pork.

Stage 2 - 8 min.
Cajun-style lentil salad
Fry until as done as you like, stirring frequently.

Set aside.

Stage 3 - 15 min.
Cajun-style lentil salad
Cook 300 g green lentils in boiling salted water.

Drain as soon as they are tender.

Stage 4 - 5 min.
Cajun-style lentil salad
Prepare 1 shallot and chop finely.

Stage 5 - 2 min.
Cajun-style lentil salad
Put the thoroughly drained lentils into a salad bowl and add the chopped shallot.

Stage 6 - 2 min.
Cajun-style lentil salad
Then add the refried pulled pork and 5 tablespoons French dressing (vinaigrette).

Stage 7 - 1 min.
Cajun-style lentil salad
Mix well and serve right away while the salad is still warm.
Remarks
If you don't have the small green "Puy" lentils, normal lentils will do just fine.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
