Step by step recipe


Stage 1 - 20 min.
Indian rice pudding
In a large saucepan over low heat, pour in 2 lb + 3.2 oz whole milk, add 3.5 oz brown sugar, 7.6 oz rice, 3 stars anise, 10 greens cardamoms beans, 4 pinches cinnamon and 1.8 oz raisins.

Cook gently, uncovered, stirring occasionally.

Stage 2 - 15 min.
Indian rice pudding
Meanwhile, start your oven at 150°C (300°F) and place a baking sheet on which you've poured 1.8 oz whole almonds and 1.8 oz cashew nuts to roast for about 15 minutes (no need to preheat the oven for this).

Stage 3 - 3 min.
Indian rice pudding
Once the dried fruit has cooled, chop coarsely.

Stage 4 - 10 min.
Indian rice pudding
Continue cooking the rice until tender and creamy.

Stage 5 - 1 min.
Indian rice pudding
Add the chopped dried fruit...

Stage 6 - 1 min.

  • It's not really the subject of this recipe, but yes, you can marinate very well in yoghurt, often with spices for the tenderness and flavour of the meat
