Apricot and pistachio clafoutis
For this apricot and pistachio clafoutis, we'll first bake the apricots on their own in the oven, before pouring in the clafoutis dough for a second baking.

This first baking apart will enhance the taste of the apricots in the clafoutis.

Step by step recipe


Stage 1 - 15 min.
Apricot and pistachio clafoutis
Preheat oven to 200°C (390°F).

Prepare 0 kg 2 g apricots, cut into medium-sized pieces (cut into 8).

Stage 2 - 2 min.

Butter a gratin dish, and sprinkle with 1 tablespoon caster sugar (I'm using cane sugar here, but it's not essential).

Stage 3 - 20 min.
Apricot and pistachio clafoutis
Pour the apricots into the dish, sprinkle again with 2 tablespoons caster sugar, then bake for 15-20 minutes.

Stage 4 - 5 min.

Meanwhile, prepare 1 lb + 1.6 oz Clafoutis batter.

Stage 5

After 20 minutes, remove the apricots from the oven and set aside, but do not turn off the oven.

Stage 6 - 5 min.

Pour 1.4 oz pistachios onto a baking sheet and roast in the oven for 5 minutes.

Stage 7 - 1 min.

After this time, remove the pistachios from the oven (do not turn it off), place them on a chopping board and chop coarsely.

Stage 8 - 1 min.

Sprinkle the apricots with the pistachios...

Stage 9 - 1 min.

...then pour in the clafoutis batter.

Stage 10 - 30 min.
Apricot and pistachio clafoutis
Bake for approximately 30 minutes.
Remarks
If your oven allows it, you can bake the apricots and roast the pistachios at the same time.
