For this apricot and pistachio clafoutis, we'll first bake the apricots on their own in the oven, before pouring in the clafoutis dough for a second baking.

This first baking apart will enhance the taste of the apricots in the clafoutis.

Step by step recipe


Stage 1 - ⌛ 15 min.
Apricot and pistachio clafoutis : Stage 1
Preheat oven to 200°C (390°F).

Prepare 1 kg apricots, cut into medium-sized pieces (cut into 8).

Stage 2 - ⌛ 2 min.

Butter a gratin dish, and sprinkle with 1 tablespoon caster sugar (I'm using cane sugar here, but it's not essential).

Stage 3 - ⌛ 20 min.

Pour the apricots into the dish, sprinkle again with 2 tablespoons caster sugar, then bake for 15-20 minutes.

Stage 4 - ⌛ 5 min.

Meanwhile, prepare 500 g clafoutis batter.

After 20 minutes, remove the apricots from the oven and set aside, but do not turn off the oven.

Pour 40 g pistachios onto a baking sheet and roast in the oven for 5 minutes.

Stage 7 - ⌛ 1 min.

After this time, remove the pistachios from the oven (do not turn it off), place them on a chopping board and chop coarsely.

Stage 8 - ⌛ 1 min.

Sprinkle the apricots with the pistachios...

Stage 9 - ⌛ 1 min.

...then pour in the clafoutis batter.

Stage 10 - ⌛ 30 min.

Bake for approximately 30 minutes.
Remarks
If your oven allows it, you can bake the apricots and roast the pistachios at the same time.
Keeping: Several days in the fridge, protected by cling film.
