  • 1 broad beans 500 g broad beans
  • 2 belly (streaky) bacon 150 g belly (streaky) bacon
  • 3 shallot 1 shallot
  • 4 sage 4 leaves sage
  • 5 cream 200 g cream
  • 6 Pasta 400 g Pasta
  • 7 salt salt
  • 8 pepper pepper
  • Total weight: 1,275 grams

Step by step recipe


Stage 1 - ⌛ 30 min.
Country-style spring pasta : Stage 1
Prepare 500 g broad beans, then set aside.

Stage 2 - ⌛ 5 min.
Country-style spring pasta : Stage 2
Cut 150 g belly (streaky) bacon into small pieces.

Stage 3 - ⌛ 5 min.
Country-style spring pasta : Stage 3
In a small frying pan over medium heat, pour in the fat-free lardons and toast, stirring occasionally.

Stage 4 - ⌛ 3 min.
Country-style spring pasta : Stage 4
Meanwhile, prepare and slice 1 shallot.

Stage 5 - ⌛ 2 min.
Country-style spring pasta : Stage 5
When the lardons are toasted to your liking, add the minced shallot and 4 leaves sage, season with salt and pepper, then cook for another minute or 2, stirring constantly.

Stage 6 - ⌛ 10 min.
Country-style spring pasta : Stage 6
Add 200 g cream, season with salt and pepper and bring to the boil.

Then lower the heat and allow to thicken gently.

Check seasoning.

Stage 7 - ⌛ 7 min.
Country-style spring pasta : Stage 7
Meanwhile, cook 400 g Pasta, then drain.

Stage 8 - ⌛ 2 min.
Country-style spring pasta : Stage 8
Return the pasta to the pan, add the beans and pour over the creamy bacon sauce.

Return to the heat for 1 or 2 minutes, stirring well.

Your pasta is ready.
Remarks
If you don't have sage, replace it with a bay leaf or a few sprigs of thyme.

If you prefer, you can remove the sage in step 8.
Keeping: 1 or 2 days in the fridge, protected by cling film.
