  • 6 butter 20 g butter

Prepare 600 g purple-sprouting broccoli, we'll use them raw...

Prepare 100 g mayonnaise by adding 1 tablespoon Chervil and 1 tablespoon lemon juice with the oil.

Dry the broccoli well with a kitchen towel, then pour into a salad bowl.

Add the chervil mayonnaise and mix with a fork.

Remarks
If you don't have cape broccoli, use classic broccoli.

For the lemon juice, use either yellow or green, depending on your taste. Yellow is more classic, and green adds an interesting extra flavour.
