Step by step recipe


Stage 1 - ⌛ 6 min.
Pork and mushroom duo : Stage 1
Cut 200 g pork meat and 200 g smoked pork belly (or thick cut streaky bacon) into small pieces and set aside.

Stage 2 - ⌛ 10 min.

Prepare 500 g mushrooms and cut into pieces.

In a frying pan over very high heat, pour in 3 tablespoons olive oil and, when hot, add the mushrooms.

Sauté until nicely colored.

Season with salt, then transfer to a plate.

In the same frying pan, over medium heat this time, pour in 2 tablespoons olive oil and when hot, add the diced smoked bacon on its own.

Toast for 2 or 3 minutes, stirring occasionally.

Add the diced meat, crushed garlic clove and season with salt and pepper.

Cook all the ingredients together, keeping an eye on the meat: when it's done, you've finished cooking.

Pour in the mushrooms and stir.

Add the cream, salt and pepper, stir and thicken to taste.

Check seasoning.

Remove and discard the garlic clove, and serve with chopped chives if possible.
Remarks
You can use veal instead of pork in this recipe.
Keeping: Enjoy immediately, but can be stored for several days in the fridge.
