Step by step recipe


Stage 1 - 3 min.
Oat shortbread biscuits
Blend 3 cups + 3 tablespoons rolled oats for a few seconds to obtain a rough oat flour.

Stage 2 - 3 min.
Oat shortbread biscuits
Put this oat flour, 2 cups flour, 1 13 cup butter (cut into small pieces), 23 cup caster sugar and 3 eggs into the mixing bowl of a food processor.

Stage 3 - 5 min.
Oat shortbread biscuits
Knead until evenly mixed (about 4 or 5 minutes).

Stage 4 - 2 hours
Oat shortbread biscuits
Gather the dough together into a slab and wrap in plastic film. Refrigerate for at least 2 hours.

Stage 5 - 10 min.
Oat shortbread biscuits
Preheat oven to 180°C (360°F).

Roll out the dough to a thickness of 3-4mm (a bare ¼"), then cut out circles with a découpoir or an upturned glass. Place these on a baking sheet.

Stage 6 - 20 min.
Oat shortbread biscuits
Bake for 15-20 minutes. It is important not to overcook them.
Remarks
If you want a more oaty flavour, reduce the quantity of flour by half, and increase the oats by the same amount.

  • LOVE this recipe, jh. I've been using oat flour when ever I can include it these days. I enjoy the flavor it imparts especially in baked goods. Although, I have added it to bread crumbs too. Thanks for sharing this recipe.
