Step by step recipe


Stage 1 - ⌛ 10 min.
Grated apple cake : Stage 1
Peel 4 apples, cut into 4 and remove the core.

Stage 2 - ⌛ 10 min.

Grate and drizzle with ½ lemon juice.

Stage 3 - ⌛ 4 min.

In a frying pan over medium heat, melt 50 g butter, then add 50 g brown sugar and stir.

Add the grated apples...

...and cook for a few minutes, without browning.

Leave to cool off the heat.

Melt 120 g butter and set aside.

Preheat oven to 180°C (360°F).

Pour 4 eggs and then 100 g caster sugar into a bowl and whisk to combine.

Sift together over 150 g flour, 6 g baking powder and 3 pinches fine (or table) salt egg-sugar mixture.

Stage 9 - ⌛ 1 min.

Mix again thoroughly.

Add the warm melted butter.

Stage 11 - ⌛ 1 min.

Mix again.

Add the grated apples and mix one last time.

Stage 13 - ⌛ 2 min.
Grated apple cake : Stage 13
Pour into a buttered springform pan, here with a diameter of 22 cm (9 inches).

Stage 14 - ⌛ 45 min.
Grated apple cake : Stage 14
Bake at 180°C (360°F) for approximately 45 minutes.

Enjoy warm or cold.
Remarks
If you're in a hurry, you can add the raw grated apples, but it won't taste as good.

With the lemon juice, you can also add the zest to give the apples a little extra flavour.

You can add a dash of calvados, and even flambé them, at the end of cooking the grated apples.
Keeping: 2 or 3 days in the fridge.
