Chilli potato wedges
To make these spicy wedges, the potatoes are boiled whole first, then cut, coated in your choice of spices and cooked in the oven until browned and beautifully crisp.

Step by step recipe


Stage 1 - ⌛ 8 min.
Chilli potato wedges : Stage 1
Thoroughly wash 750 g potatoes. Choose medium-sized rather than enormous ones.

Stage 2 - ⌛ 35 min.
Chilli potato wedges : Stage 2
Put into a saucepan, cover with cold water and put on to boil.

Cook until tender.

Stage 3 - ⌛ 10 min.

Drain the potatoes and leave to cool slightly.

Cut lengthways into wedges.

Preheat the oven to 430°F (220°C).

Stage 4 - ⌛ 5 min.

Put the wedges into a bowl. Salt ,pepper, then add 2 tablespoons flour and 2 tablespoons chilli spices.

Mix gently to coat evenly in the flour and spices.

Stage 5 - ⌛ 3 min.

Pour 4 tablespoons olive oil over and mix again to coat well in the oil (add a little more if necessary).

Stage 6 - ⌛ 10 min.
Chilli potato wedges : Stage 6
Lay a sheet of cooking parchment on a baking sheet and arrange the wedges on it so that they don't touch.

Stage 7 - ⌛ 40 min.
Chilli potato wedges : Stage 7
Bake for 30 to 40 minutes until nicely browned.
Remarks
You can use whatever spices you prefer, or simply enjoy the potatoes plain.
Keeping: Should be eaten immediately.
