Strawberry mousse with mascarpone
This dessert is bursting with strawberry flavour. The creamy mascarpone mousse is made with a cream whipper and served on a bed of lightly sweetened fresh strawberries.

Step by step recipe


Stage 1 - 2 min.
Strawberry mousse with mascarpone : Stage 1
Put 150 g Mascarpone, 50 g liquid cream et 30 g caster sugar into a large bowl.

Stage 2 - 1 min.
Strawberry mousse with mascarpone : Stage 2
Mix with a whisk.

Stage 3 - 1 min.

Add 100 g clear strawberry juice and mix again.

Stage 4

This should give you a fairly runny mixture, similar in texture to pancake batter.

Stage 5 - 3 min.

Pour through a fine strainer into a cream whipper.

Stage 6 - 2 min.

Seal the whipper and pierce a gas cartridge. Shake well and refrigerate until needed.

Stage 7 - 10 min.

Prepare 200 g strawberries and cut into small pieces. Sprinkle with 1 tablespoon vanilla sugar and mix.

Stage 8 - 2 min.

Put a layer of fruit in each dish.

Pipe a generous swirl of strawberry mousse on top.

Decorate with a sprig of mint, if possible, and serve without delay.
Remarks
Just before serving you can top the mousse with a few toasted flaked almonds.
