Step by step recipe


Stage 1 - 10 min.
Scrambled eggs and leeks on toast
Prepare and thinly slice 1 shallot.

Prepare and thinly slice 2 leeks.

Stage 2 - 1 min.
Scrambled eggs and leeks on toast
Heat 3 tablespoons olive oil in a frying pan on medium heat. When good and hot, add the sliced shallot, salt and pepper.

Cook for 1 minute without colouring.

Stage 3 - 8 min.
Scrambled eggs and leeks on toast
Add the leeks and cook uncovered, stirring gently, until they are just tender.

Only add salt at the end of cooking.

Set aside.

Stage 4 - 20 min.

Stage 5 - 1 min.

When just done, take off the heat and add 100 ml smoked cheese...

Stage 6 - 2 min.

...and mix until fully incorporated.

Prepare 4 slices thin toast.

Stage 8 - 4 min.

Spread a generous layer of cheesy scrambled eggs on each slice.

Stage 9 - 4 min.
Scrambled eggs and leeks on toast
Top with the shredded leeks and serve immediately.
Remarks
For the bread, I recommend a rustic type, such as sourdough or seeded.

If you don't have smoked cheese, a normal cheese will do just fine (Comté, Cheddar...).

If you don't have time to make scrambled eggs, a small omelette will work instead.
