This combination of spring cabbage and leeks, cooked separately then mixed with rice, is a simple recipe and everything can be prepared in advance.

Step by step recipe


Stage 1 - 10 min.
Rice with spring greens

Stage 2 - 5 min.
Rice with spring greens
Cook in a large pan with 3 tablespoons olive oil until just tender, then salt and pepper.

Transfer to a plate and set aside.

Stage 3 - 15 min.

Cook in a large saucepan with 3 tablespoons olive oil until just tender, then salt and pepper.

Transfer to the plate with the cabbage and set aside.

Stage 5 - 2 min.
Rice with spring greens
Prepare and finely slice 1 shallot.

Stage 6 - 1 min.
Rice with spring greens
Pour 3 tablespoons olive oil into a large pan on medium heat. When good and hot, add the sliced shallot, salt and pepper.

Cook for 1 minute without colouring.

Stage 7 - 1 min.

Add the vegetables...

Stage 8 - 5 min.

...then 400 g cooked rice.

Mix well and leave to reheat through, then check the seasoning.

That's all there is to it, though you can add a drizzle of olive oil or lemon juice (or both) before serving.
Remarks
You can use different green vegetables if you prefer, or whatever you have to hand (peas, mangetout, etc.).
Keeping: 1 or 2 days in the fridge, covered with plastic film.
