Bruschetta is an Italian recipe consisting of a slice of bread in olive oil, topped with a preparation, mainly tomato-based.

Here's a very simple version, with tomatoes and mozzarella.

Step by step recipe


Stage 1 - 4 min.
Bruschetta
Wash and remove the stalk from 2 tomatoes.

You can peel them, but it's not essential.

Stage 2 - 5 min.
Bruschetta
Cut the tomatoes into small cubes and pour into a large bowl.

Stage 3 - 3 min.
Bruschetta
Pour over tomatoes 4 tablespoons vinegar, 4 tablespoons olive oil, chopped herbs, salt and pepper, then mix well.

Preheat your oven to 200°C (390°F).

Stage 4 - 2 min.
Bruschetta
Place 4 slices bread on a sheet of baking paper on a baking sheet.

Stage 5 - 2 min.
Bruschetta
Using a brush, carefully oil each slice of bread, then season lightly with salt and pepper.

Stage 6 - 4 min.
Bruschetta
Place the tomatoes on each slice of bread.

Stage 7 - 4 min.

Scatter the mozzarella over the top.

Stage 8 - 15 min.
Bruschetta
Bake for 10-15 minutes.

Enjoy warm or cold.
Remarks
If possible, choose a sourdough bread, a rustic country-style loaf, which you can also toast before oiling.

You can try replacing the mozzarella with gorgonzola cheese, which is very successful.
Keeping: Enjoy as soon as possible, but can be reheated.
