|1||Cut 150 g mozzarella into thin slices and 150 g Preserved tomatoes into thin strips.
|2||Salt and pepper 4 chicken breasts.||2 min.|
|3||Pour 2 tablespoons olive oil into a frying pan on medium heat.
When really hot, add sage and lay the chicken breasts on top.
|4||Fry on the first side, then turn over.||1 min.|
|5||Lay the sliced mozarella and strips of tomato on top of the chicken, cover the pan and leave the mozzarella to melt.||5 min.|
|6||At the last minute, take the lid off the pan, turn the fillets over again and cook for a further 5 minutes.
Serve right away.
