Step by step recipe


Stage 1 - 10 min.
Fried rice with turnips and new peas
Prepare 500 ml new peas, cut into small pieces.

Stage 2 - 5 min.

Cook them in a large pot of boiling salted water.

Stage 3 - 10 min.

Meanwhile, prepare 500 ml turnips.

Stage 4 - 5 min.

Once the peas are cooked, using a spider or skimmer, remove them from the cooking water (don't throw it away), put them in a colander and refresh them under cold water.

Put them through a wringer to dry, then set aside.

Stage 5 - 5 min.

Pour the turnips into the same cooking water and cook until tender.

Stage 6 - 2 min.

Then drain and set aside.

Stage 7 - 2 min.

In a bowl, break up 3 eggs, season with salt and pepper, then whisk quickly.

Stage 8 - 1 min.

In a large saucepan over medium heat, pour in 4 tablespoons olive oil and when hot, pour in the eggs.

Cook for 10 seconds maximum...

Stage 9 - 1 min.

...then add 480 ml cooked rice and 2 tablespoons sesame oil, and stir immediately to mix eggs and rice.

Stage 10 - 3 min.

Add the peas and turnips and mix again.

Reheat for 2 or 3 minutes, check seasoning, and you're ready to go.
Remarks
No sesame oil? Replace it with olive oil, or the oil of your choice, or even a good knob of butter.

If you don't have new peas, replace them with classic peas or snow peas.

For an extra kick, add a dash of lemon juice or soy sauce, or both, at the end of the recipe.
Keeping: 1 or 2 days in the fridge, protected by cling film.
