In this very simple recipe, the mushrooms are lightly sautéed, then glazed with soy sauce and lemon juice, and served on a bed of plain white rice.

Step by step recipe


Stage 1 - 15 min.
Glazed mushrooms with plain rice
Prepare 750 g mushrooms and cut them in 4 in the height.

Stage 2 - 10 min.
Glazed mushrooms with plain rice
Pour 4 tablespoons olive oil into a large frying pan on high heat. When good and hot, add the mushrooms.

It is important not to add any salt. Sauté until lightly browned, stirring from time to time.

Stage 3 - 1 min.

Add 4 tablespoons soy sauce all at once...

Stage 4 - 2 min.
Glazed mushrooms with plain rice
...and coat the mushrooms by stirring frequently until the soy sauce has completely evaporated.

This will leave the mushrooms richly coloured and shiny: they are now glazed or "lacquered".

Stage 5 - 1 min.
Glazed mushrooms with plain rice
Turn off the heat, add the chopped parsley and squeeze the juice of ½ lemon over the mushrooms. Stir one last time.

Stage 6
Glazed mushrooms with plain rice
Serve on a bed of plain white rice or pilau.
Remarks
For a more distinctive flavour, add the zest of the lemon at the same time as the juice, or even 2 tablespoons of rice vinegar.

Similarly, you can use lime instead of lemon and replace the parsley with lemon balm.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
