These small almond and lemon-flavoured biscuits have a short, melt-in-the-mouth texture. They are known as "sablés arlésiens" in French.

Step by step recipe


Stage 1 - 5 min.
Arlesian Biscuits
Put into a food-processor bowl: 60 g flour, 20 g ground almonds, 30 g icing sugar, 50 g butter, 13 egg, 13 pinch fine (or table) salt and the zest of 13 lemon.

Stage 2 - 3 min.

Knead until thoroughly mixed.

Stage 3 - 1 hour

Gather the dough and pat into a flat "cake". Wrap in plastic film.

Refrigerate for at least 1 hour or overnight.

Stage 4 - 5 min.

Preheat the oven to 360°F (180°C).

Roll out the dough about 1/2 cm (1/4 inch) thick.

Cut out small circles...

Stage 6 - 3 min.

... and arrange on a baking sheet. NB: As the dough is very fragile, a palette knife will make lifting the biscuits easier.

Stage 7 - 10 min.

Bake for 10 minutes.
Remarks
Lime zest works very well, too.
Keeping: A few days in an airtight tin.
